Hummus

Ingredients:

  • 1 (15 oz) can chickpeas, rinsed
  • 5 Tbsp water
  • ¼ c. Tahini
  • 3 Tbsp fresh lemon juice
  • 1 ½ Tbsp extra virgin olive oil
  • ½ small garlic clove, minced
  • Salt
  • ⅛ tsp ground cumin
  • Pinch Cayenne pepper
  • 1 Tbsp minced fresh parsley

Preparation Instructions:

  1. Process chickpeas, tahini, lemon juice, oil, garlic, ½ tsp salt, cumin and cayenne together in food processor until smooth
  2. Transfer to bowl, cover and refrigerate for at last an hour to let flavors blend.
  3. Season with salt to taste and sprinkle with parsley and a little cayenne prior to serving.
